Overcook rather than undercook

Slightly overcooked cakes hold their shape. Undercooked cakes sink in the middle

Cool before assembling

Bake the day before and ice on the morning of the party — never assemble a warm cake

A little more or less than the recipe states is fine — no need to weigh unless you want to
